　　地沟油加工过程中,另一个脱色问题,也很关键,像从各个脏兮兮的渠道里收集来的油虽然经过初炼后,颜色和正宗的食品油无法比拟,格林公司还要在这些地沟油里添加色素,以达到和真的食品油颜色一样的效果.但无论这些地下加工地沟油企业怎么操作,有一项技术目前无法达到就是动植物油的分离.地沟油是包含了植物油和动物油两种成分的,也就是饱和性脂肪酸和不饱和性脂肪酸.据了解,目前即使再好的分离技术,也只能达到15%的界限,也就是在一瓶地沟油炼制而成的食品油中,有85%是植物油成分,其余的15%是动物油成分,由于饱和性脂肪酸比较重,往往15%就沉淀在瓶底.
　　而饱和性脂肪酸和不饱和性脂肪酸最大的区别就是在一定温度下各自的形态,前者凝成固体,后者仍为液体.
　　如何鉴定我们从市场上买到的食用油是不是有问题?
　　昨天,我们采访办案民警,他说有一种简单的办法可以把油瓶放在冰箱的冷藏室里,几个小时后,就可以发现油瓶底部有没有沉淀物.
　　这里要告诉大家,棕榈油也会出现沉淀,但如果你在市场上买的是花生油、稻谷油等,上述冷藏鉴别方法可以适用.
